Restaurant and commercial kitchen propane
American River Gas supplies propane to restaurants and commercial kitchens in the foothills for ranges, fryers, griddles, ovens and water heaters, from a tank we set and a gas line we run to the building. Keep Full automatic delivery suits a busy kitchen because the office schedules fills from the weather and your usage, so the burners are less likely to go out in the middle of service.

What a propane kitchen runs
Outside the town cores, a restaurant, cafe or event venue may sit beyond the natural gas main, and then propane is what the kitchen cooks on. Propane burns with the same instant, adjustable flame cooks expect from gas, so the line equipment is familiar. Tell us what is on your cook line and what else in the building burns gas, and we will talk through tank size and delivery.
- Ranges, stock pots and woks
- Fryers, griddles and charbroilers
- Convection and deck ovens
- Commercial water heaters for dish and hand sinks
- Space heat for the dining room

Why running out costs a kitchen more than the gas
An empty tank on a Friday night means a dark line and lost covers. It also means a service call: when a system runs out, safety codes and our insurance require a pressure check before the gas goes back on, someone has to be there for it, and it carries an extra charge. On Keep Full with an account in good standing, there is no charge for that leak test or the special trip (certain restrictions apply). If you would rather order your own deliveries, call us when the gauge reads about 30%.
After hours, on weekends and on holidays, our answering service reaches staff.
Equipment built for natural gas
Commercial cooking equipment is set up for one fuel. A range, fryer or oven that came from a natural gas kitchen has to be converted before it burns propane, using the parts and settings its manufacturer specifies. Running it without that conversion is unsafe. We do appliance conversions, and we can look at used equipment before it goes on the line.

Piping, shut-offs and the leak test
Two national codes split the work. NFPA 58 covers the tank, cylinders and the propane system up to the building, and NFPA 54, the National Fuel Gas Code, covers gas piping and appliances inside. Local building and fire officials enforce them.
Each appliance needs its own shut-off valve within 6 feet, so a cook can isolate one fryer without shutting down the line. A leak test is required whenever a new appliance is connected, after repairs or modifications, and after any shut-off, so call before the new oven arrives rather than after. Keep spare cylinders outdoors in a secured, ventilated spot, never in the kitchen, dry storage or the walk-in.
If you smell gas, leave the building first, then call 911 and us from outside.

Questions
Straight answers
Can you set up propane for a new restaurant or a remodel?
Yes. We set the tank, run the underground line to the building and install the regulators, then leak test the system before it goes into service. Call early so tank placement fits your plans and permit.
What happens if we run out on a weekend?
Call (530) 888-7438. After hours the answering service reaches staff. Because the system ran out, a pressure check is required before the gas can be turned back on, so someone needs to be on site.
Can our used natural gas fryer run on propane?
Only after it is converted with the manufacturer's propane parts. Call the office and we will look at it before it is hooked up.
